These Garlic Butter Shrimp Stuffed Mushrooms are the ultimate savory bite juicy shrimp sautéed in garlic butter, nestled into tender mushroom caps, topped with golden breadcrumbs and lemon zest. A luxurious appetizer that’s easy to make and impossible to resist.
Ingredients
16–20 medium cremini or white mushrooms, stems removed
2 tablespoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
1/2 pound raw shrimp, peeled, deveined, and finely chopped
1/3 cup panko breadcrumbs (or almond meal for low-carb)
1/4 cup grated Parmesan cheese (optional)
1 tablespoon lemon zest
2 tablespoons chopped parsley (plus more for garnish)
Salt and black pepper to taste
Instructions
Preheat oven to 375°F (190°C). Clean mushrooms with a damp cloth and remove stems. Arrange caps on a parchment-lined baking sheet.
Heat olive oil and butter in a skillet over medium heat. Add garlic and cook for 30 seconds until fragrant. Add chopped shrimp and sauté for 2-3 minutes until just pink. Season with salt and pepper.
Transfer shrimp mixture to a bowl. Stir in breadcrumbs, Parmesan (if using), lemon zest, and chopped parsley.
Spoon the mixture into each mushroom cap and gently press to fill. Optionally top with extra breadcrumbs or cheese.
Bake for 15-18 minutes until mushrooms are tender and tops are golden brown.
Cool slightly, garnish with parsley and lemon zest, and serve warm.
Notes
To make gluten-free, use almond meal or gluten-free breadcrumbs.
You can prep these ahead and bake just before serving.
For added flavor, mix in cream cheese, chili flakes, or drizzle with garlic aioli before serving.
