  • 8 ounces of mushrooms, sliced (cremini or button mushrooms recommended)
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter (optional for extra richness)
  • 1 teaspoon of dried thyme (or 1 tablespoon of fresh thyme)
  • Salt and pepper to taste
  • 1/4 teaspoon of red pepper flakes (optional for a bit of heat)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the cauliflower thoroughly under cold water. Shake off excess water and cut into bite-sized florets.
  2. Slice the mushrooms. If using larger mushrooms, cut them into quarters to help them hold their shape.
  3. Peel and mince the garlic cloves. A garlic press works well, but a knife is fine too.
  4. Chop the fresh parsley for garnish and set aside.
  5. In a large skillet, heat the olive oil over medium heat. Once shimmering, add the cauliflower florets. Sauté for about 5-7 minutes, stirring occasionally, until they start to get golden brown and tender but not fully cooked.
  6. Add the sliced mushrooms to the skillet and stir. Cook for another 5 minutes, allowing the mushrooms to release their moisture and steam the cauliflower.
  7. Add the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.
  8. Sprinkle in the dried thyme, salt, pepper, and red pepper flakes (if using). Stir to combine and cook for another 2-3 minutes.
  9. If using butter, add it now and stir until melted and incorporated.
  10. Check the texture of the cauliflower; it should be tender but still have a bit of bite. If too firm, cover the skillet with a lid for a couple of minutes to steam further.
  11. Remove from heat and taste, adjusting seasoning if necessary. A squeeze of lemon juice can brighten the flavors.
  12. Transfer to a serving dish or serve directly from the skillet, garnishing with chopped fresh parsley.
