Instructions

  1. In a medium-sized mixing bowl, combine the olive oil, minced garlic, grated Parmesan cheese, chopped parsley, salt, black pepper, Italian seasoning, and lemon juice. Whisk until well blended and smooth.
  2. Taste the marinade and adjust the seasoning if necessary. Add more garlic if desired.
  3. Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 to 4 hours, or overnight for best results.
  4. Preheat your grill to medium-high heat (375°F to 400°F). If using a charcoal grill, ensure coals are evenly distributed and have turned white. Let the chicken sit at room temperature for 15 minutes before grilling. Lightly oil the grill grates with a paper towel dipped in vegetable oil.
  5. Place the marinated chicken on the grill, leaving space between each piece. Grill for 6-7 minutes on one side without moving. Flip the chicken and grill for another 6-7 minutes. Check for doneness with a meat thermometer (165°F or 75°C) or by cutting into the thickest part to ensure juices run clear.
