Ingredients
1.5 lbs pork shoulder or pork belly, cut into 1-inch cubes
1 tbsp olive oil
1 tsp kosher salt
1 tsp freshly ground black pepper
1 tsp paprika
4 tbsp unsalted butter
6 cloves garlic, smashed
2 tbsp fresh parsley, chopped
Instructions
Pat pork cubes dry and season with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Add pork in a single layer and sear 2-3 minutes per side until golden brown; work in batches if necessary.
Reduce heat to medium and add butter and smashed garlic.
Stir until butter is melted and garlic is fragrant, about 1-2 minutes.
Return all pork to skillet, toss to coat in garlic butter, and cook 1-2 minutes more.
Sprinkle with fresh parsley and serve immediately.
Notes
For a leaner version, use pork tenderloin instead of pork shoulder or belly.
Add lemon juice or red pepper flakes for flavor variation.
Use smoked paprika for a deeper flavor.
