Instructions

  1. In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, and sugar (if using). Whisk until well blended.
  2. In another bowl, mix the wet ingredients: Greek yogurt, milk, egg, and vanilla extract. Blend until smooth.
  3. Pour the wet mixture into the dry ingredients and gently fold together using a spatula. Do not overmix; a few lumps are okay.
  4. Gently fold in the blueberries.
  5. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  6. Use a 1/4 cup measuring cup to pour the batter onto the skillet, leaving space between each pancake.
