Description

Cheesy ground beef enchiladas smothered in red enchilada sauce and baked to perfection. An easy Tex-Mex dinner that’s ready in under an hour.


Ingredients

  • For the Filling:

– 1 pound ground beef

– 1 small onion, diced

– 2 cloves garlic, minced

– 1 teaspoon chili powder

– 1 teaspoon cumin

– ½ teaspoon smoked paprika

– Salt and pepper to taste

– 1 cup shredded cheddar cheese

 

For the Enchiladas:

– 8 small flour or corn tortillas

– 1 (15 oz) can red enchilada sauce

– 1 ½ cups shredded Mexican cheese blend

For Topping:

– Sour cream

– Diced tomatoes

– Chopped cilantro


Instructions

1. Preheat oven to 375°F (190°C).

2. In a skillet, brown ground beef. Drain fat.

3. Add onion, garlic, chili powder, cumin, paprika, salt, and pepper. Cook until onions soften.

4. Stir in 1 cup shredded cheddar cheese.

5. Spoon beef mixture into tortillas. Roll and place seam-side down in a baking dish.

6. Pour enchilada sauce over tortillas. Top with Mexican cheese blend.

7. Bake for 20-25 minutes until cheese is bubbly.

8. Serve with sour cream, tomatoes, and cilantro.

Notes

– Use turkey or chicken as a substitute for beef.

– Add beans or corn for extra texture.

– Freeze unbaked enchiladas for easy meal prep.
