Description
A creamy, cheesy, and flavorful Ground Turkey Zucchini Casserole made with layers of seasoned turkey, zucchini slices, and a light Greek yogurt sauce. The perfect low-carb comfort food dinner!
Ingredients
1 lb ground turkey
3 medium zucchinis, sliced
1 cup shredded mozzarella
½ cup grated Parmesan
1 small onion, diced
2 cloves garlic, minced
1 cup Greek yogurt
1 egg, beaten
1 tbsp olive oil
1 tsp Italian seasoning
½ tsp paprika
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C) and grease a baking dish.
2. In a skillet, sauté onion and garlic, then brown ground turkey with seasoning.
3. Slice and pat dry zucchini rounds.
4. Mix yogurt, egg, and half of each cheese.
5. Layer turkey, zucchini, and sauce, repeating until full.
6. Sprinkle remaining cheese on top and bake for 30–35 minutes.
7. Rest for 10 minutes before serving, garnish with herbs.
Notes
Pat zucchini dry to avoid excess moisture.
Store leftovers up to 4 days or freeze for 2 months.
Use full-fat Greek yogurt for best texture.
