Instructions
- Wash the zucchinis thoroughly under cold water to remove any dirt or residue. Pat them dry with a clean kitchen towel.
- Slice the zucchinis into even rounds, about 1/4 inch thick. Alternatively, cut them into sticks or half-moons for a different presentation.
- Place the sliced zucchinis in a large mixing bowl.
- Drizzle the olive oil over the zucchini slices.
- Sprinkle the garlic powder, onion powder, Italian seasoning, salt, and pepper over the zucchini. Adjust seasonings to taste.
- Toss the zucchini slices until they are evenly coated with the oil and seasonings.
- Preheat your air fryer to 400°F (200°C).
- Arrange the seasoned zucchini slices in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
- Cook for about 10-12 minutes, shaking the basket halfway through. The zucchini should be golden brown and crispy on the edges.
- If using Parmesan cheese, sprinkle it over the zucchini during the last 2 minutes of cooking.
- Carefully remove the cooked zucchini from the air fryer and transfer them to a serving platter.
- Garnish with freshly chopped parsley if desired.
- Serve warm as a side dish, snack, or topping for salads or grain bowls.
