Creamy, zesty, and packed with protein, these High-Protein Lemon Cheesecake Bites are a no-bake dessert made with Greek yogurt, cream cheese, and a buttery crust. Light, refreshing, and perfect for guilt-free indulgence!
Ingredients
Crust:
1 cup graham cracker crumbs or almond flour
2 tbsp melted butter
1 tbsp honey
Filling:
1 ½ cups Greek yogurt or cottage cheese
8 oz light cream cheese
1 scoop vanilla protein powder
¼ cup honey or erythritol
2 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
Instructions
1. Combine crust ingredients and press into a parchment-lined pan.
2. In a bowl, beat cream cheese, yogurt, protein powder, lemon juice, zest, and honey until smooth.
3. Spread filling evenly over crust and smooth the top.
4. Chill for at least 4 hours until firm.
5. Cut into squares and garnish with lemon zest or mint leaves.
Notes
For a firmer texture, add 1 tsp gelatin dissolved in warm water.
Store in the fridge up to 5 days or freeze for 2 months.
Use almond flour for a gluten-free version.
