Description

Juicy Greek chicken meatballs made with herbs, garlic, and lemon zest, served with a refreshing homemade tzatziki sauce. Perfect as an appetizer, dinner, or meal prep.


Ingredients

1 lb ground chicken

½ cup breadcrumbs

1 egg

2 cloves garlic, minced

½ small onion, grated

2 tbsp parsley, chopped

1 tbsp dill, chopped

1 tsp oregano

Zest of 1 lemon

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

For tzatziki:

1 cup Greek yogurt

½ cucumber, grated and squeezed dry

2 cloves garlic, minced

1 tbsp lemon juice

1 tbsp olive oil

1 tbsp dill, chopped

Salt and pepper


Instructions

1. Preheat oven to 400°F or heat skillet with olive oil.

2. Mix chicken, breadcrumbs, egg, garlic, onion, parsley, dill, oregano, lemon zest, salt, and pepper.

3. Shape into meatballs and place on baking sheet or plate.

4. Bake 15–18 minutes or pan-sear until golden and cooked through.

5. Make tzatziki by combining yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper.

6. Serve meatballs warm with tzatziki.

Notes

Use a mix of chicken breast and thigh for juicier meatballs.

Don’t skip squeezing cucumber for tzatziki to avoid watery sauce.

Chill meatball mixture if sticky before shaping.
