Ingredients

1 cup finely shredded zucchini

1 cup granulated sugar

1/2 cup unsalted butter or olive oil, melted

2 large eggs

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

For the glaze:

1 cup powdered sugar

23 tablespoons fresh lemon juice

1 teaspoon lemon zest


Instructions

Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.

In a large bowl, whisk together sugar, melted butter, eggs, lemon juice, lemon zest, and vanilla.

Stir in shredded zucchini.

In a separate bowl, whisk flour, baking powder, and salt. Add to wet ingredients and mix just until combined.

Pour batter into prepared pan and spread evenly.

Bake for 25–30 minutes, or until a toothpick comes out clean.

Cool completely before glazing.

For the glaze, whisk powdered sugar, lemon juice, and zest until smooth. Drizzle over cooled bars.

Slice into squares and serve.

Notes

Drain excess water from zucchini if needed.

For gluten-free, use a 1:1 gluten-free baking blend.

Double recipe for a 9×13-inch pan.
