Description

This Loaded Potato Meatloaf combines ground beef, creamy mashed potatoes, and cheddar cheese for a comforting dish. Topped with barbecue sauce and garnished with parsley, it’s a hearty meal perfect for family dinners.

Ingredients

Scale
  • 1 ½ pounds ground beef
  • 1 cup mashed potatoes (prepared)
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ cup barbecue sauce (for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, mashed potatoes, and shredded cheddar cheese.
  3. Add the finely chopped onion and minced garlic to the bowl.
  4. Crack the large egg into the mixture.
  5. Sprinkle in the breadcrumbs and pour in the Worcestershire sauce. Season with salt, black pepper, smoked paprika, and dried thyme. Mix until just combined.
  6. Transfer the mixture to a clean surface or a baking sheet lined with parchment paper.
  7. Shape the mixture into a loaf form, about 8 inches long and 4 inches wide.
  8. Place the shaped meatloaf onto a baking dish or lined baking sheet.
  9. Brush the top with barbecue sauce.
  10. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  11. After 45 minutes, check on the meatloaf. If the top is browning too quickly, cover it loosely with aluminum foil.
  12. Once done, remove from the oven and let it rest for about 10 minutes.
  13. While the meatloaf is baking, prepare your favorite sides, such as steamed green beans and a fresh garden salad.
  14. Optionally, make garlic butter roasted potatoes by tossing chopped potatoes with olive oil, garlic, and herbs, then roasting until golden.
  15. Slice the meatloaf into thick pieces, about 1 inch wide.
  16. On each plate, place a slice of meatloaf and drizzle with extra barbecue sauce.
  17. Add servings of your chosen sides and garnish with freshly chopped parsley.
  18. Gather your family or friends around the table and enjoy!
  19. Appreciate the blend of textures and flavors.
  20. Store leftovers in an airtight container in the refrigerator.

Notes

  • Customize the meatloaf by adding ingredients like diced bell peppers or mushrooms.
  • For a spicier kick, add chopped jalapeños or hot sauce.
  • Substitute ground turkey or chicken for a healthier version, and use sweet potatoes instead of regular mashed potatoes.
  • Experiment with different types of cheese for varied flavors.
