- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ cup barbecue sauce (for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, mashed potatoes, and shredded cheddar cheese.
- Add the finely chopped onion and minced garlic to the bowl.
- Crack the large egg into the mixture.
- Sprinkle in the breadcrumbs and pour in the Worcestershire sauce. Season with salt, black pepper, smoked paprika, and dried thyme. Mix until just combined.
- Transfer the mixture to a clean surface or a baking sheet lined with parchment paper.
- Shape the mixture into a loaf form, about 8 inches long and 4 inches wide.
- Place the shaped meatloaf onto a baking dish or lined baking sheet.
- Brush the top with barbecue sauce.
- Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
- After 45 minutes, check on the meatloaf. If the top is browning too quickly, cover it loosely with aluminum foil.
- Once done, remove from the oven and let it rest for about 10 minutes.
- While the meatloaf is baking, prepare your favorite sides, such as steamed green beans and a fresh garden salad.
- Optionally, make garlic butter roasted potatoes by tossing chopped potatoes with olive oil, garlic, and herbs, then roasting until golden.
- Slice the meatloaf into thick pieces, about 1 inch wide.
- On each plate, place a slice of meatloaf and drizzle with extra barbecue sauce.
- Add servings of your chosen sides and garnish with freshly chopped parsley.
- Gather your family or friends around the table and enjoy!
- Appreciate the blend of textures and flavors.
- Store leftovers in an airtight container in the refrigerator.
Notes
- Customize the meatloaf by adding ingredients like diced bell peppers or mushrooms.
- For a spicier kick, add chopped jalapeños or hot sauce.
- Substitute ground turkey or chicken for a healthier version, and use sweet potatoes instead of regular mashed potatoes.
- Experiment with different types of cheese for varied flavors.
