A hearty layered dinner combining juicy meatloaf with cheesy mashed potatoes, bacon, and melted cheddar. The ultimate comfort food in one pan!
Ingredients
For the Meatloaf Base:
– 1 ½ pounds ground beef
– 1 cup breadcrumbs
– 1 egg
– ½ cup milk
– 2 tablespoons ketchup
– 1 tablespoon Worcestershire sauce
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon salt
– ½ teaspoon black pepper
For the Potato Layer:
– 3 large russet potatoes, peeled and cubed
– ¼ cup butter
– ½ cup sour cream
– 1 cup shredded cheddar cheese
– Salt and pepper to taste
For the Topping:
– ½ cup shredded cheddar cheese
– 4 slices bacon, cooked and crumbled
– 2 tablespoons chopped green onions or parsley
Instructions
1. Preheat oven to 375°F (190°C). In a bowl, mix ground beef, breadcrumbs, egg, milk, ketchup, Worcestershire, garlic powder, onion powder, salt, and pepper.
2. Press meatloaf mixture into a 9×9 or 8×8-inch baking dish. Bake uncovered for 25 minutes.
3. While meatloaf bakes, boil potatoes until tender (about 15 minutes). Drain and mash with butter, sour cream, and 1 cup cheddar cheese. Season with salt and pepper.
4. Spread mashed potatoes over the baked meatloaf.
5. Top with ½ cup shredded cheddar, crumbled bacon, and green onions or parsley.
6. Return to oven and bake for 10-15 more minutes, until cheese is melted and bubbly.
7. Let rest 5 minutes before slicing and serving.

– Use ground turkey for a lighter version.
