Description

This Loaded Ranch Bacon Potato Salad is creamy, tangy, and packed with flavor from crispy bacon, sharp cheddar, ranch seasoning, red onions, and green peas. It’s the ultimate crowd-pleasing side dish for BBQs, potlucks, or cozy dinners. Perfectly comforting and easy to prep ahead!

Ingredients

– 2 ½ pounds baby yellow potatoes (halved or quartered)

– 1 cup mayonnaise

– ½ cup sour cream

– 1 packet ranch seasoning mix (or 2–3 tablespoons homemade)

– 1 cup shredded cheddar cheese

– 6–8 slices cooked bacon, crumbled

– ¾ cup frozen green peas, thawed

– ½ cup finely chopped red onion

– 2 tablespoons chopped fresh parsley or chives (optional)

– Salt and black pepper to taste

Instructions

1. Add the chopped baby potatoes to a large pot of salted water. Bring to a boil and cook for 12–15 minutes, until fork-tender. Drain and let cool slightly.

2. In a large bowl, whisk together the mayonnaise, sour cream, and ranch seasoning until smooth.

3. Add the cooled potatoes to the dressing and gently stir to coat.

4. Fold in the shredded cheddar, crumbled bacon (reserve a bit for topping), green peas, and chopped red onion.

5. Cover and refrigerate for 1–2 hours before serving.

6. Just before serving, sprinkle the top with reserved bacon, extra shredded cheese, and fresh herbs if using.

Notes

– You can substitute Greek yogurt for sour cream if you want a lighter option.

– Add diced celery or chopped pickles for an extra crunch.

– Make this salad a day ahead for even better flavor.

– Always crisp your bacon well so it stays crunchy in the salad.
