Juicy chicken meatballs simmered in a creamy garlic Parmesan sun-dried tomato sauce  a flavorful, comforting dish perfect for weeknight dinners or special occasions.


Ingredients

1 1/2 lbs ground chicken

1/2 cup breadcrumbs

1/3 cup Parmesan cheese, grated

1 large egg

3 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1 1/2 cups heavy cream

1/2 cup chicken broth

1/2 cup Parmesan cheese, grated

2 cups baby spinach (optional)

Fresh parsley or basil, for garnish


Instructions

In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, red pepper flakes, salt, and pepper. Mix gently until combined.

Shape into 1 1/2-inch meatballs.

Heat olive oil in a skillet. Sear meatballs on all sides, then remove.

In the same skillet, melt butter. Add garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook 1–2 minutes.

Stir in heavy cream and chicken broth. Simmer 5 minutes.

Add Parmesan and stir until sauce thickens.

Return meatballs to skillet and simmer 10–12 minutes, until cooked through (165°F).

Stir in spinach if using. Garnish with parsley or basil. Serve warm.

Notes

Do not overmix the meat mixture to keep meatballs tender. Use freshly grated Parmesan for the best flavor. Bake meatballs instead of searing for an easier method.
