Ingredients
Scale
- 1 package (9 oz) fresh cheese tortellini
- 1 cup Italian sausage, casings removed
- 1 cup diced ham
- 1 cup cooked and crumbled bacon
- 1 cup diced pepperoni
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the fresh cheese tortellini and cook according to package instructions (about 3-5 minutes) until they float to the top and are tender.
- Drain the tortellini in a colander, reserving about 1/4 cup of the pasta water, and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks.
- Cook for 5-7 minutes until browned and cooked through, stirring occasionally.
- Add the diced ham and cook for 2-3 minutes until heated through.
- Stir in the crumbled bacon and diced pepperoni, cooking for another 2-3 minutes.
- Add the minced garlic and cook for 1 minute, stirring constantly.
- Pour in the can of diced tomatoes (with juices) and stir to combine.
- Add the heavy cream, stirring to create a rich sauce.
- Sprinkle in the Italian seasoning and season with salt and pepper. Let it simmer for about 5 minutes to thicken.
- If the sauce is too thick, add some reserved pasta water to reach desired consistency.
- Add the cooked tortellini to the skillet, gently folding to coat in the sauce.
- Let it simmer for an additional 2-3 minutes.
- Sprinkle shredded mozzarella cheese over the top, cover with a lid, and cook for 2-3 minutes until melted and bubbly.
- Remove from heat and sprinkle with grated Parmesan cheese if desired.
- Garnish with fresh basil leaves for added flavor and color.
- Serve hot, ideally with a side salad or garlic bread.
