Description
A vibrant Mediterranean-inspired dip made with roasted red peppers, olives, feta, garlic, and herbs — smoky, tangy, and perfect as a spread, sauce, or appetizer.
Ingredients
1 ½ cups roasted red peppers
1 cup mixed olives, pitted
2 garlic cloves
¼ cup crumbled feta cheese
¼ cup toasted walnuts or almonds (optional)
2 tbsp fresh parsley or basil
1 tsp red wine vinegar or lemon juice
⅓ cup extra virgin olive oil
½ tsp smoked paprika (optional)
Salt and black pepper to taste
Instructions
1. Add roasted red peppers, olives, garlic, feta, nuts, herbs, vinegar, and paprika to a food processor.
2. Pulse until coarsely combined.
3. Slowly drizzle in olive oil while pulsing to desired texture.
4. Taste and adjust seasoning with salt and pepper.
5. Transfer to a jar, drizzle with olive oil, and garnish with herbs.
Notes
Drain roasted peppers and olives well before blending. Adjust consistency by adding more olive oil. Store in the refrigerator for up to 1 week or freeze for 2 months.
