Mini Chocolate Chip Muffins are soft, sweet, and perfectly bite-sized ideal for snacks, breakfasts, or lunchboxes. Ready in just 10 minutes, no mixer required!
Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 cup granulated sugar
– 1/4 cup brown sugar
– 1/2 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 2/3 cup buttermilk
– 1/3 cup vegetable oil
– 1 large egg
– 1 teaspoon vanilla extract
– 3/4 cup mini chocolate chips (plus more for topping)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a mini muffin pan.
2. Whisk together dry ingredients in a large bowl.
3. In another bowl, whisk buttermilk, oil, egg, and vanilla.
4. Pour wet mixture into dry and mix gently.
5. Fold in chocolate chips.
6. Divide batter into muffin cups, about 3/4 full.
7. Bake 10–12 minutes, or until golden and set.
8. Cool in pan briefly, then transfer to wire rack.
Notes
Don’t overmix the batter.
Use paper liners for easy cleanup.
Top with extra chips before baking for a bakery-style look.
Store in an airtight container at room temp or freeze for later.
Great with milk or coffee.
