Ingredients
4 boneless, skinless chicken breasts
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 cups cherry tomatoes
8 ounces fresh mozzarella cheese, sliced or use mozzarella pearls
1/3 cup balsamic vinegar
2 tablespoons honey (or brown sugar)
2 tablespoons water or chicken broth (optional)
1/4 cup fresh basil leaves, thinly sliced
Instructions
Pat chicken breasts dry and season with garlic powder, Italian seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and nearly cooked through. Transfer chicken to a plate.
Add cherry tomatoes to the skillet and cook 2-3 minutes until softened and starting to burst.
Reduce heat to medium. Stir in balsamic vinegar and honey (plus water or broth if desired). Simmer for 2-3 minutes until slightly thickened.
Return chicken to the pan and top each piece with mozzarella. Spoon tomatoes and sauce over the chicken.
Cover and cook another 2-3 minutes until cheese is melted and chicken is cooked through.
Remove from heat, top with fresh basil, and serve hot.
Notes
Pound chicken breasts to an even thickness for faster, juicier cooking. Use quality balsamic vinegar for best flavor. Store leftovers in the fridge for up to 3 days and reheat gently with a splash of water or broth to loosen the sauce.
