Ingredients

– 1 lb boneless, skinless chicken breasts, diced

– 2 tablespoons olive oil

– 3 cloves garlic, minced

– ½ cup diced onion

– 2 cups long-grain white rice

– 3 cups chicken broth

– 1 cup BBQ sauce (homemade or store-bought)

– ¼ cup honey

– 1 teaspoon smoked paprika

– ½ teaspoon ground black pepper

– ½ teaspoon salt (adjust to taste)

– Fresh green onions, chopped (for garnish)


Instructions

1. Heat olive oil in a large skillet or pan over medium heat. Add diced chicken and season with salt, pepper, and smoked paprika. Cook 5–6 minutes until chicken is browned and cooked through. Transfer chicken to a plate and set aside.

2. In the same pan, add diced onion and garlic. Sauté for 2–3 minutes until softened and fragrant.

3. Add rice to the pan, stirring for 1–2 minutes until lightly toasted. Pour in chicken broth and stir gently. Bring mixture to a boil, reduce heat to low, cover with a lid, and simmer 15–20 minutes or until rice is tender and liquid absorbed.

4. In a small bowl, whisk together BBQ sauce and honey until smooth. Set aside.

5. Once rice is fully cooked, return chicken to pan and gently combine. Pour honey BBQ sauce over chicken and rice, stirring carefully to coat evenly.

6. Cook an additional 2–3 minutes on low heat, allowing flavors to meld and sauce to slightly caramelize.

7. Garnish generously with chopped fresh green onions and serve warm. Enjoy immediately!
