Roasted Garlic Cabbage is a delicious side dish that turns cabbage into a caramelized delight, infused with garlic and olive oil. Perfect alongside grilled meats or as a hearty vegetarian option, this simple recipe is easy to prepare and full of flavor.

  • 1 medium head of green cabbage
  • 4 tablespoons olive oil
  • 6 cloves of garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Remove any wilted or damaged outer leaves from the cabbage. Rinse under cold water and pat dry.
  3. Slice the cabbage into wedges by cutting it in half from top to bottom, then cutting each half into quarters.
  4. In a large mixing bowl, combine minced garlic, olive oil, salt, black pepper, and smoked paprika (if using). Whisk until well combined.
  5. Pour the garlic mixture over the cabbage wedges and toss gently with your hands to ensure even coating.
  6. If using balsamic vinegar, drizzle it over the cabbage and toss again.
  7. Line a large baking sheet with parchment paper or aluminum foil. Arrange the cabbage wedges in a single layer on the sheet.
  8. Roast in the preheated oven for 25-30 minutes, flipping the wedges halfway through for even browning.
  9. For extra char, turn on the broiler for the last 2-3 minutes, watching closely to prevent burning.
  10. Once roasted, remove from the oven and let cool for a few minutes.
  11. Transfer to a serving platter and garnish with freshly chopped parsley.
  12. Serve warm as a side dish or enjoy cold in salads or wraps.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or in a skillet over medium heat with a splash of olive oil.
