Roasted Garlic Cabbage is a delicious side dish that turns cabbage into a caramelized delight, infused with garlic and olive oil. Perfect alongside grilled meats or as a hearty vegetarian option, this simple recipe is easy to prepare and full of flavor.

- 1 medium head of green cabbage
- 4 tablespoons olive oil
- 6 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- 1 tablespoon balsamic vinegar (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Remove any wilted or damaged outer leaves from the cabbage. Rinse under cold water and pat dry.
- Slice the cabbage into wedges by cutting it in half from top to bottom, then cutting each half into quarters.
- In a large mixing bowl, combine minced garlic, olive oil, salt, black pepper, and smoked paprika (if using). Whisk until well combined.
- Pour the garlic mixture over the cabbage wedges and toss gently with your hands to ensure even coating.
- If using balsamic vinegar, drizzle it over the cabbage and toss again.
- Line a large baking sheet with parchment paper or aluminum foil. Arrange the cabbage wedges in a single layer on the sheet.
- Roast in the preheated oven for 25-30 minutes, flipping the wedges halfway through for even browning.
- For extra char, turn on the broiler for the last 2-3 minutes, watching closely to prevent burning.
- Once roasted, remove from the oven and let cool for a few minutes.
- Transfer to a serving platter and garnish with freshly chopped parsley.
- Serve warm as a side dish or enjoy cold in salads or wraps.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or in a skillet over medium heat with a splash of olive oil.
