Description

Oven Roasted Garlic Cabbage is a simple, healthy side dish featuring thick cabbage slices brushed with garlicky olive oil, roasted until crispy and caramelized, then garnished with fresh herbs.


Ingredients

For the Roasted Cabbage:

– 1 medium green cabbage, cut into 1-inch thick rounds

– 3 tbsp olive oil

– 3 cloves garlic, minced

– 1/2 tsp smoked paprika (optional)

– 1/4 tsp red pepper flakes (optional)

– Salt and black pepper, to taste

For Garnish:

– 2 tbsp fresh parsley, chopped

– Additional red pepper flakes or lemon zest (optional)


Instructions

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Slice cabbage into 1-inch thick rounds, keeping the core intact to hold them together.

3. In a small bowl, mix olive oil, minced garlic, smoked paprika, red pepper flakes, salt, and black pepper.

4. Place cabbage rounds on the baking sheet and brush both sides with the garlic oil mixture.

5. Roast for 25–30 minutes, flipping halfway, until edges are crispy and centers are tender.

6. Remove from oven and garnish with fresh parsley. Add extra red pepper flakes or lemon zest if desired.

7. Serve hot as a side dish or vegetarian main.

Notes

– Keep the cabbage core in place so slices stay together during roasting.

– Adjust red pepper flakes for more or less spice.

– Try purple cabbage for a colorful twist.

– Add Parmesan cheese before the last 5 minutes of roasting for a cheesy variation.
