Description

Ingredients

For the Salad:

– 4 cups mixed greens (spring mix, spinach, or arugula)

– 2–3 ripe peaches, thinly sliced

– ½ cup crumbled feta cheese

– ⅓ cup toasted pecans or walnuts

– 2 tbsp chopped fresh basil or mint (optional)

– Freshly ground black pepper, to taste

For the Dressing:

– 2 tbsp extra virgin olive oil

– 1 tbsp balsamic vinegar or lemon juice

– 1 tsp honey or maple syrup

– ½ tsp Dijon mustard (optional)

– Salt and pepper, to taste


Instructions

1. In a small bowl or jar, whisk together olive oil, balsamic vinegar (or lemon juice), honey, Dijon mustard (if using), salt, and pepper. Set aside.

2. In a large bowl, combine mixed greens, sliced peaches, crumbled feta, toasted pecans, and herbs (if using).

3. Drizzle the dressing over the salad and toss gently to combine.

4. Finish with a few cracks of fresh black pepper and an optional drizzle of balsamic glaze or honey. Serve immediately.

– Use ripe but firm peaches to avoid mushiness.
