Juicy peaches, creamy fresh mozzarella, and fragrant basil, all layered and drizzled with a zesty lemon dressing. The perfect easy summer salad for lunches, parties, or a light side dish!
Ingredients
3–4 ripe peaches, pitted and sliced
8 ounces fresh mozzarella (balls or sliced)
1/4 cup fresh basil leaves, torn or sliced
Freshly ground black pepper
Flaky sea salt
For the Lemon Dressing:
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey or maple syrup
1/2 teaspoon Dijon mustard (optional)
1/4 teaspoon salt
Zest of 1 lemon (optional)
Instructions
Wash and slice peaches into wedges. Slice mozzarella or halve mozzarella balls.
Arrange peaches and mozzarella on a platter, overlapping.
Whisk olive oil, lemon juice, honey, mustard, salt, and zest for the dressing.
Scatter basil over salad, drizzle with lemon dressing.
Sprinkle with flaky salt and black pepper. Serve immediately.
Notes
For best results, use ripe, juicy peaches and quality mozzarella. Assemble salad and add dressing just before serving. Leftovers keep up to 1 day but are best enjoyed fresh.
