Description

Juicy peaches, crisp watermelon, creamy feta, and fresh mint come together in this refreshing, colorful summer salad. A drizzle of olive oil and a touch of black pepper tie it all together.


Ingredients

– 3 ripe peaches, sliced or diced

– 3 cups seedless watermelon, cubed

– 1/3 cup crumbled feta

– 2 tablespoons chopped fresh mint

– 1 tablespoon extra virgin olive oil

– Freshly ground black pepper, to taste


Instructions

1. In a large bowl, combine sliced peaches and watermelon cubes.

2. Sprinkle crumbled feta and chopped mint over the top.

3. Drizzle with olive oil and add black pepper to taste.

4. Gently toss to combine and serve immediately or chilled.
