- 1 cup fresh pineapple juice
- 1 tablespoon freshly grated ginger
- 2 tablespoons lime juice (freshly squeezed)
- 2 tablespoons honey or agave syrup (adjust to taste)
- 2 cups sparkling water or club soda
- Ice cubes
- Fresh pineapple slices, for garnish
- Fresh mint leaves, for garnish
- Lime wedges, for garnish
Instructions
- Cut a fresh pineapple into quarters, remove the core and skin, and chop the flesh into smaller pieces. Blend the pineapple pieces until smooth. Strain through a fine mesh sieve or cheesecloth into a bowl or pitcher to yield about 1 cup of fresh pineapple juice.
- Peel a piece of fresh ginger root and grate it until you have about 1 tablespoon.
- Cut a fresh lime in half and squeeze out the juice to obtain about 2 tablespoons.
- In a small bowl, combine the grated ginger, lime juice, and honey or agave syrup. Stir until the honey is fully dissolved.
- In a large pitcher, mix the fresh pineapple juice with the ginger-lime mixture. Stir well.
- Just before serving, pour in the sparkling water or club soda and gently stir to combine.
- Taste the mixture and add more honey or agave syrup if desired, stirring until fully incorporated.
- Fill your favorite glasses with ice cubes.
- Pour the pineapple ginger mixture over the ice, filling each glass about three-quarters full.
- Garnish each glass with a slice of fresh pineapple, a few mint leaves, and a lime wedge.
- Serve immediately while bubbly and cold, optionally adding a colorful straw.
Notes
- Store any leftover mocktail mixture in an airtight container in the refrigerator, but consume within a day for best fizz. Keep sparkling water separate until serving.
