A hearty, comforting Polish Potato Soup with smoky kielbasa, tender potatoes, carrots, and fresh dill simmered in a creamy broth. Perfect for chilly nights and family meals.


Ingredients

5 medium potatoes, peeled and diced

12 oz smoked kielbasa sausage, sliced

2 medium carrots, sliced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup water

1 cup heavy cream or half-and-half

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh dill, chopped


Instructions

1. Melt butter in a large soup pot. Brown kielbasa slices, then remove and set aside.

2. Sauté onion, garlic, and carrots until softened.

3. Add potatoes, broth, and water. Bring to a boil, then reduce heat and simmer 15–20 minutes.

4. Stir in cooked kielbasa, cream, salt, pepper, and dill. Simmer for 5 minutes.

5. Taste, adjust seasoning, and serve hot with fresh bread.

Notes

For a lighter version, use half-and-half or Greek yogurt instead of cream.

For freezer storage, omit cream until reheating.

Use fresh dill for the most authentic flavor.
