Layered Protein Cottage Cheese Fudge Bites with a chewy chocolate base, creamy protein-rich center, and decadent chocolate top, drizzled with honey for a healthy indulgence.
Ingredients
1 cup rolled oats or almond meal
2 tablespoons cocoa powder
2 tablespoons nut butter (peanut, almond, or cashew)
2 tablespoons honey or maple syrup (for base)
1 cup low-fat cottage cheese
1 scoop vanilla or chocolate protein powder
2 tablespoons Greek yogurt
2 tablespoons honey or maple syrup (for middle layer)
1/2 cup dark chocolate chips
1 tablespoon coconut oil
Optional: extra honey drizzle and cocoa powder for topping
Instructions
1. Blend oats, cocoa powder, nut butter, and honey until a sticky dough forms. Press into parchment-lined 8×8-inch dish.
2. Blend cottage cheese, protein powder, Greek yogurt, and honey until smooth. Spread over the base.
3. Melt chocolate chips with coconut oil until smooth. Pour over the cottage cheese layer and spread evenly.
4. Refrigerate for at least 3 hours or freeze for 1 hour until set.
5. Slice into squares, drizzle with honey, and dust with cocoa powder before serving.
Notes
For a refined sugar-free version, replace honey with medjool dates in the base.
For extra flavor, sprinkle sea salt or add crushed nuts on top before chilling.
