Ingredients
Meatloaf:
1 ½ lbs ground beef
1 egg
¾ cup quick oats or breadcrumbs
½ cup milk
1 small onion, finely chopped
2 garlic cloves, minced
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp pepper
½ tsp paprika
Mashed Potatoes:
3 large russet potatoes, peeled and cubed
3 tbsp butter
¼ cup milk
Salt and pepper, to taste
Topping:
1 ½ cups shredded cheddar cheese
3–4 slices cooked bacon, crumbled
1 tbsp chopped parsley
Instructions
1. Preheat oven to 375°F (190°C) and grease baking dish.
2. Mix meatloaf ingredients until combined; press into pan and bake 25–30 minutes.
3. Boil potatoes until tender; mash with butter, milk, salt, and pepper.
4. Spread mashed potatoes over baked meatloaf.
5. Sprinkle cheese and bacon on top.
6. Bake 10–15 minutes until cheese melts and bubbles.
7. Garnish with parsley and serve warm.
Notes
For a sweeter flavor, brush the meatloaf with a ketchup and brown sugar glaze before baking.
Substitute ground turkey for a lighter option.
