Description
A quick and flavorful Japanese stir-fried noodle dish made with chewy udon noodles, vegetables, and a savory-sweet sauce. Perfect for weeknight dinners.
Ingredients
2 portions fresh or frozen udon noodles
1 tablespoon vegetable oil
2 cloves garlic, minced
1 cup mushrooms, sliced
2 baby bok choy, halved
2 green onions, chopped
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon dark soy sauce (optional)
1 teaspoon mirin or rice vinegar
1 teaspoon sugar
1 teaspoon sesame oil
Toasted sesame seeds for garnish
Instructions
Prepare udon noodles according to package instructions. Drain and set aside.
Heat oil in a skillet or wok over medium-high heat.
Add garlic and mushrooms; stir-fry 2 minutes.
Add bok choy and cook 1–2 minutes.
Add udon noodles to pan.
Mix soy sauce, oyster sauce, dark soy sauce (if using), mirin, sugar, and sesame oil in a small bowl. Pour over noodles.
Stir-fry 2–3 minutes until coated and heated through.
Garnish with green onions and sesame seeds. Serve hot.
Notes
Add protein like chicken, shrimp, beef, or tofu for variation.
Swap vegetables based on preference or season.
Use vegetarian oyster sauce for a vegan version.
