Description

A quick and delicious pasta dish featuring roasted cherry tomatoes, fresh garlic, and creamy burrata over al dente spaghetti. A restaurant-quality meal at home in just 30 minutes!


Ingredients

8 oz (225g) spaghetti

1 pint cherry tomatoes

2 tbsp olive oil

3 garlic cloves, minced

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

1 ball burrata (4 oz)

Fresh basil leaves

Parmesan, for garnish (optional)


Instructions

1. Preheat oven to 400°F (200°C). Add cherry tomatoes, garlic, olive oil, red pepper flakes, salt, and pepper to a baking dish. Roast for 20 minutes.

2. Meanwhile, cook pasta in salted water until al dente. Reserve 1/4 cup pasta water. Drain.

3. Toss pasta with roasted tomatoes and reserved water. Mix gently.

4. Plate pasta and top with burrata. Garnish with fresh basil and parmesan. Serve immediately.

Notes

– Swap spaghetti for gluten-free pasta if needed.

– Make it spicy with extra red chili flakes.

– Add lemon zest or balsamic glaze for a gourmet twist.
