  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dice the zucchini, red bell pepper, yellow bell pepper, and red onion into uniform bite-sized pieces.
  3. Halve the cherry tomatoes.
  4. In a large mixing bowl, combine all the diced vegetables and minced garlic. Drizzle with olive oil and sprinkle with dried oregano, dried thyme, salt, and pepper. Toss until well coated.
  5. Spread the vegetable mixture evenly on a large baking sheet in a single layer.
  6. Roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
  7. Remove from the oven and let cool slightly.
  8. In a medium saucepan, bring 2 cups of vegetable broth to a boil over medium-high heat.
  9. Add the orzo pasta and stir gently to prevent sticking.
  10. Reduce heat to medium-low and simmer for about 8-10 minutes, or until al dente, stirring occasionally.
  11. Remove from heat and drain any excess liquid if necessary.
  12. In a large mixing bowl, combine the cooked orzo and roasted vegetables. Gently fold together.
  13. If using, sprinkle Parmesan cheese over the mixture and toss to combine. Adjust seasoning with salt and pepper if needed.
  14. Transfer the orzo and vegetable mixture to a serving platter or individual bowls.
  15. Garnish with fresh basil leaves and drizzle with olive oil or additional Parmesan cheese if desired.
