Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon rose water
  • 1/2 cup unsalted pistachios, chopped
  • 1/4 cup dried rose petals (edible, for garnish)
  • Optional: a few drops of pink food coloring

Instructions

  1. In a large mixing bowl, combine the heavy cream and whole milk. Whisk until smooth.
  2. Add the granulated sugar and salt, whisking until the sugar is completely dissolved (about 2-3 minutes).
  3. Stir in the vanilla extract and rose water.
  4. If desired, add a few drops of pink food coloring for a lovely hue.
  5. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours (or overnight for enhanced flavor).
  6. While chilling, toast the pistachios in a dry skillet over medium heat for about 5 minutes, stirring frequently. Let cool and chop coarsely.
  7. Pour the chilled mixture into your ice cream maker, following the manufacturer’s instructions.
  8. Churn for about 20-25 minutes until thickened to a soft-serve consistency.
  9. Add the chopped pistachios during the last few minutes of churning.
  10. Transfer the churned ice cream to an airtight container.
  11. Press a piece of parchment paper onto the surface to prevent ice crystals.
  12. Seal the container and freeze for at least 4 hours, or until firm.
  13. Let the ice cream sit at room temperature for 5-10 minutes to soften slightly.
  14. Scoop into bowls or cones using a warm ice cream scoop.
  15. Garnish with additional chopped pistachios and dried rose petals for a beautiful presentation.

Notes

  • For a more intense rose flavor, adjust the amount of rose water to your taste.
  • Ensure that the pistachios are unsalted to maintain the balance of flavors in the ice cream.
