  • Author: Melissa
  • Total Time: 45 minutes
  • Yield: 24 cookies 1x

Description

Enjoy these rich and chewy salted brownie cookies that perfectly blend the textures of brownies and cookies. With a delightful mix of sweetness and a touch of salt, they are the ultimate treat for chocolate lovers!

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Flaky sea salt, for sprinkling

Instructions

  1. In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until smooth and well combined (about 1-2 minutes).
  2. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract until well incorporated.
  3. In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing with a spatula or wooden spoon until just combined. Avoid overmixing.
  5. Fold in the semi-sweet chocolate chips until evenly distributed.
  6. Cover the mixing bowl with plastic wrap or transfer the dough to an airtight container.
  7. Refrigerate the dough for at least 30 minutes (up to 2 hours for better results).
  8. Preheat your oven to 350°F (175°C).
  9. Line two baking sheets with parchment paper.
  10. Once chilled, remove the dough from the refrigerator. Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  11. Sprinkle a small pinch of flaky sea salt on top of each cookie.
  12. Bake in the preheated oven for 10-12 minutes. The edges should be set, while the centers may look slightly underbaked.
  13. Remove from the oven and let cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
  14. Store completely cooled cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them in a single layer in a freezer-safe container, separated by parchment paper, for up to 3 months.
  15. To enjoy frozen cookies, thaw at room temperature for about 15-20 minutes.

Notes

  • For an extra indulgent treat, serve warm with a scoop of vanilla ice cream.
  • Pair with a glass of cold milk or coffee for a delightful afternoon snack.
