Instructions

  1. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  2. Pour in the honey, followed by the eggs and vanilla extract. Mix on low speed until just combined, being careful not to overmix.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined. A few flour streaks are okay.
  5. Gently fold in the chopped pistachios using a spatula until evenly distributed.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C).
  8. Line two baking sheets with parchment paper.
  9. Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  10. Before baking, sprinkle a small pinch of flaky sea salt on top of each cookie.
  11. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
