  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups cubed bread
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the breakfast sausage. Break it up into smaller pieces as it cooks.
  3. Cook the sausage for about 5-7 minutes, or until browned and no longer pink, stirring occasionally.
  4. Drain any excess grease from the skillet and set the cooked sausage aside to cool slightly.
  5. In a large mixing bowl, crack the 8 large eggs.
  6. Add the 2 cups of milk to the eggs.
  7. Sprinkle in the salt, black pepper, garlic powder, and onion powder. Whisk until well combined.
  8. In a greased 9×13 inch baking dish, layer the cubed bread evenly across the bottom.
  9. Sprinkle the cooked sausage over the bread cubes.
  10. Pour the egg mixture over the bread and sausage, pressing down gently with a spatula to help the bread soak up the mixture.
  11. Sprinkle the shredded cheddar cheese over the top.
  12. Cover the baking dish with aluminum foil and bake for 30 minutes.
  13. Remove the foil and continue baking for an additional 15-20 minutes, or until the casserole is set in the middle and the top is golden brown and bubbly.
  14. Check for doneness by inserting a knife into the center; it should come out clean.
  15. Let the casserole cool for about 10 minutes before cutting.
  16. If using, sprinkle chopped green onions on top for garnish.
  17. Cut into squares and serve warm, pairing with fresh fruit or a light salad.
  18. Allow the casserole to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days.
  19. Reheat portions in the microwave for 1-2 minutes or in the oven at 350°F (175°C) for 10-15 minutes.
