A delicious twist on the classic, these French Onion Sausage Rolls feature sweet caramelized onions, savory sausage, and buttery puff pastry. Golden, flaky, and packed with flavor—perfect for parties or snacks!
Ingredients
1 pound sausage meat (pork, chicken, or plant-based)
2 large yellow onions, thinly sliced
2 tablespoons butter or olive oil
1 teaspoon sugar
1 teaspoon fresh thyme leaves (or ½ tsp dried)
1 tablespoon Worcestershire sauce
½ teaspoon salt
½ teaspoon black pepper
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
½ cup shredded Gruyère or Swiss cheese (optional)
Instructions
Melt butter in a skillet over medium-low heat. Add onions, sugar, salt, and thyme. Cook, stirring often, for 25–30 minutes until deeply caramelized. Stir in Worcestershire sauce and cook 1 minute. Cool slightly.
In a bowl, mix sausage meat with cooled onions (and cheese if using).
Roll out puff pastry and cut in half to make 2 rectangles. Shape filling into logs along one long edge of each piece.
Brush edge with egg, roll up tightly, and place seam-side down. Cut each log into 4–6 rolls.
Place on lined baking sheet, cut a slit on top, and brush with egg wash.
Bake at 400°F (200°C) for 22–26 minutes until golden and crisp. Serve warm, garnished with parsley.
Notes
For extra flavor, add a splash of sherry or white wine when caramelizing onions. Make ahead and freeze unbaked rolls for fresh-baked flavor anytime.
