Ingredients
1 pound pizza dough
1 cup pumpkin purée or 2 cups roasted pumpkin cubes
2 tablespoons olive oil
1 large onion thinly sliced
2 cloves garlic minced
1 1/2 cups shredded mozzarella cheese
1/2 cup crumbled goat cheese or fontina optional
1/4 cup grated Parmesan cheese
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried
1 teaspoon chopped fresh sage optional
Salt and black pepper to taste
Balsamic glaze optional for drizzling
Instructions
Preheat oven to 450°F (230°C). Place pizza stone if using.
Caramelize onions in skillet with olive oil over low heat for 20–25 minutes. Add garlic near end.
Stretch dough into 12-inch round. Brush with olive oil.
Spread pumpkin purée or scatter roasted cubes over dough.
Top with onions, mozzarella, goat cheese, Parmesan, and herbs. Season with salt and pepper.
Bake 12–15 minutes until crust golden and cheese bubbly.
Drizzle with balsamic glaze if using. Garnish with thyme and slice to serve.
