Ingredients

4 slices rustic bread

2 tablespoons olive oil

1 small onion finely diced

1 red bell pepper finely diced

3 cloves garlic minced

1 can crushed tomatoes (14 ounces)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/4 teaspoon cayenne pepper optional

Salt and black pepper to taste

4 large eggs

Fresh parsley or cilantro for garnish

Optional: feta cheese, chili oil, or pesto


Instructions

Heat olive oil in skillet. Cook onion and bell pepper until softened.

Stir in garlic, cumin, paprika, cayenne, salt, and pepper. Cook 1 minute.

Add crushed tomatoes and simmer 10–15 minutes until thickened.

Toast bread until golden.

Fry eggs sunny-side up or to preference.

Spoon sauce onto toast, top with fried eggs, garnish with herbs and extras if desired.

Serve immediately.

Use sturdy bread to avoid sogginess.
