Description

Slow Cooker Beef Manhattan is a tender, comforting dish made with shredded roast beef, rich brown gravy, and creamy mashed potatoes. Easy to make, deeply flavorful, and perfect for cozy weeknight dinners.


Ingredients

3 lbs beef chuck roast

1 packet onion soup mix

1 cup beef broth

1 tbsp Worcestershire sauce

1 onion, sliced

3 cloves garlic, minced

1 tbsp cornstarch + 2 tbsp water

Salt and pepper to taste

2 tbsp butter (optional)

Mashed potatoes, for serving

Fresh parsley, for garnish


Instructions

1. Season beef with salt and pepper. Place onions and garlic in bottom of slow cooker.

2. Set roast on top and sprinkle onion soup mix over it.

3. Pour in broth and Worcestershire sauce. Cover and cook on LOW 8–9 hours or HIGH 4–5 hours.

4. Remove beef and shred. Pour liquid into saucepan, add cornstarch slurry, and simmer until thickened.

5. Return beef to gravy and mix.

6. Serve over mashed potatoes, garnish with parsley.

Notes

For extra depth, brown beef before slow cooking.

Use low-sodium broth to control salt.

Freezes beautifully for up to 3 months.
