Description
Tender Salisbury-style meatballs simmered in a rich mushroom-onion gravy right in your slow cooker. An easy, cozy dinner perfect over mashed potatoes or noodles.
Ingredients
1 ½ lbs ground beef
½ cup breadcrumbs
1 large egg
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
1 can (10.5 oz) cream of mushroom soup
1 ½ cups beef broth
1 small onion, thinly sliced
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch + 2 tablespoons water (optional)
Fresh parsley for garnish
Black pepper to taste
Instructions
In a large bowl, combine beef, breadcrumbs, egg, ketchup, Worcestershire, onion powder, garlic powder, salt, and pepper.
Mix until just combined, then form into meatballs (about 1 ½ inches).
Optional: Brown meatballs in a skillet for 2–3 minutes per side.
Place sliced onions in the bottom of the slow cooker.
Add meatballs on top of onions.
In a bowl, whisk together soup, broth, and Worcestershire.
Pour gravy mixture over the meatballs.
Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
Optional: Stir in cornstarch slurry in the last 20 minutes to thicken.
Serve over mashed potatoes or noodles and garnish with parsley.
Notes
Use 85/15 beef for best flavor and moisture.
Don’t overmix meatball mixture to avoid toughness.
For extra flavor, sauté mushrooms and add to the gravy.
Freeze leftovers in gravy for easy future meals.
