Description

A cozy and flavorful banana bread with a crackly cinnamon-sugar topping inspired by snickerdoodle cookies. Moist, sweet, and perfect for breakfast or dessert.


Ingredients

3 ripe bananas, mashed

½ cup unsalted butter, melted

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

Topping:

¼ cup granulated sugar

1 teaspoon ground cinnamon

Optional: ¼ teaspoon cream of tartar


Instructions

Preheat oven to 350°F (175°C). Grease or line a loaf pan.

Mash bananas in a large bowl.

Whisk in melted butter, sugar, eggs, and vanilla.

Add flour, baking soda, salt, and cinnamon. Stir until just combined.

Pour batter into loaf pan and smooth the top.

Mix topping ingredients in a small bowl.

Sprinkle cinnamon sugar topping over batter.

Bake for 50–60 minutes or until a toothpick comes out clean.

Cool in pan for 10 minutes, then transfer to a wire rack to cool fully.

Notes

Use overripe bananas for the best flavor.

Do not overmix the batter—just stir until combined.

Add a swirl of the cinnamon sugar inside the batter for extra flavor.

To freeze, wrap individual slices tightly in plastic wrap.
