Description
Juicy homemade sausage patties seared to golden perfection and smothered in rich, creamy pepper gravy. A classic Southern breakfast (or dinner) that’s quick, hearty, and full of down-home flavor.
Ingredients
For the Sausage Patties:
– 1 lb ground pork
– 1 tsp kosher salt
– 1/2 tsp black pepper
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– 1/2 tsp smoked paprika
– 1/4 tsp red pepper flakes (optional)
– 1 tsp dried sage or 1 tbsp fresh chopped sage
– 1 tbsp maple syrup (optional)
For the Pepper Gravy:
– 2 tbsp pork drippings or unsalted butter
– 2 tbsp all-purpose flour
– 1 1/2 cups whole milk (more as needed)
– 1/2 tsp salt
– 1 tsp freshly cracked black pepper (or to taste)
Instructions
1. In a large bowl, mix ground pork with salt, pepper, garlic powder, onion powder, paprika, red pepper flakes (if using), sage, and maple syrup. Do not overmix.
2. Form into 6 to 8 patties about 3 inches wide and 1/2 inch thick.
3. Heat a skillet over medium heat. Add sausage patties and cook 4–5 minutes per side or until browned and cooked through. Remove patties and leave 2 tbsp drippings in the pan.
4. For the gravy, reduce heat to medium-low. Add flour to the drippings and whisk for 1 minute to make a roux.
5. Slowly add milk while whisking to avoid lumps. Cook until thickened, about 3–5 minutes. Season with salt and plenty of black pepper.
6. Spoon hot pepper gravy over the sausage patties and serve immediately.
Notes
– Don’t press down on the patties while cooking — it squeezes out the juices.
– For extra flavor, use bacon grease in place of butter for the gravy.
– Adjust gravy thickness by adding more milk a little at a time.
– Maple syrup in the patties adds subtle sweetness and balances the spice.
