Description

These Spicy Salmon Tacos with Peach Salsa are a fresh, flavor-packed way to upgrade taco night! Juicy, spice-rubbed salmon is paired with a sweet and tangy peach salsa, all tucked into warm tortillas with crunchy cabbage. Ready in 30 minutes and bursting with bold summer flavor!

 


Ingredients

For the Salmon:

– 1 lb skinless salmon fillets, cut into chunks or strips

– 1 tbsp olive oil

– 1 tsp smoked paprika

– ½ tsp chili powder

– ½ tsp cumin

– ¼ tsp garlic powder

– ¼ tsp cayenne pepper (optional)

– Salt and black pepper to taste

For the Peach Salsa:

– 2 ripe peaches, diced

– ¼ red onion, finely diced

– 1 small jalapeño, minced (remove seeds for less heat)

– Juice of 1 lime

– 2 tbsp fresh cilantro, chopped

– Salt to taste

For Serving:

– 6–8 small corn or flour tortillas

– 1 cup shredded red cabbage or slaw mix

– Extra lime wedges and chopped cilantro (optional)


Instructions

1. In a medium bowl, combine diced peaches, red onion, jalapeño, lime juice, chopped cilantro, and salt. Toss and refrigerate while preparing the salmon.

2. In a separate bowl, toss the salmon pieces with olive oil, paprika, chili powder, cumin, garlic powder, cayenne (if using), salt, and pepper.

3. Heat a nonstick skillet or grill pan over medium-high heat. Cook the salmon for 2–3 minutes per side until nicely seared and cooked through. Set aside.

4. Warm the tortillas in a dry skillet or directly over a gas flame until soft and slightly charred.

5. Assemble the tacos: layer tortillas with shredded cabbage, spicy salmon, and generous spoonfuls of peach salsa.

6. Garnish with extra lime juice, cilantro, or a dollop of crema if desired. Serve immediately!

Notes

– Swap the peaches for mango or pineapple when out of season.

– For a creamier version, add chipotle mayo or avocado crema.

– Salmon can also be grilled for extra smokiness.

– Store leftovers separately; best enjoyed fresh!
