  • 1 pound large shrimp, peeled and deveined
  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds (for garnish)
  • Nori sheets, cut into strips (optional)

Instructions

  1. Rinse the sushi rice under cold water in a fine-mesh strainer until the water runs clear (about 2-3 minutes).
  2. In a medium saucepan, combine the rinsed sushi rice and 2 1/2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes without lifting the lid.
  3. Remove from heat and let sit, covered, for an additional 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt. Microwave for 30 seconds until dissolved. Stir well.
  5. Transfer the rice to a large bowl, pour the vinegar mixture over it, and gently fold with a wooden spatula. Allow to cool to room temperature.
  6. In a medium bowl, combine shrimp with soy sauce, sriracha, and sesame oil. Toss to coat.
  7. Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for 2-3 minutes on each side until pink and opaque.
  8. Remove from skillet and let cool slightly. Chop into smaller pieces if desired.
  9. Use a round mold or small cup to shape the stacks.
  10. Place a layer of sushi rice at the bottom, pressing down gently (about 1/2 inch thick).
  11. Add a layer of spicy shrimp on top of the rice.
  12. Follow with a layer of sliced avocado.
  13. Add a layer of cucumber slices.
  14. Sprinkle chopped green onions over the cucumber layer.
  15. Top with another layer of sushi rice, pressing down gently.
  16. Carefully remove the mold to reveal the stacked sushi. Repeat for remaining ingredients.
  17. Sprinkle sesame seeds over each stack for garnish.
  18. If using, wrap nori strips around the base of each stack for added flavor and presentation.
