Instructions
- Wash the fresh strawberries thoroughly under cold water to remove any dirt or debris.
- Hull the strawberries by removing the green tops using a knife or a huller.
- Slice the strawberries into smaller pieces to help them break down more easily.
- In a medium bowl, combine the sliced strawberries with the granulated sugar to draw out the juices.
- Let the mixture sit for about 10-15 minutes until the strawberries release their juices, creating a natural syrup.
- Transfer the macerated strawberries to a blender or food processor and blend until smooth. For a chunkier texture, pulse a few times instead of blending completely.
- Strain the puree through a fine-mesh sieve into a bowl to remove seeds and larger pieces, pressing with a spatula for maximum yield. Set aside.
- In a cold mixing bowl (chill in the freezer for 10 minutes), pour in the heavy cream.
- Add the vanilla extract to the heavy cream for flavor.
- Using an electric mixer, beat the cream on medium speed until soft peaks form (about 2-3 minutes). Be careful not to overbeat.
- If desired, add about 1 tablespoon of powdered sugar for sweetness and continue beating until stiff peaks form.
- Set the whipped cream aside in the refrigerator to keep it cool.
- Grab a tall glass or mason jar and fill it halfway with ice cubes.
- Pour about 1/4 cup of the strawberry puree over the ice, adjusting the amount based on your preference.
- Slowly pour in the club soda or sparkling water over the strawberry puree, filling the glass almost to the top.
- Gently stir the mixture to combine the strawberry puree with the soda, creating a marbled effect.
- Dollop or pipe the whipped cream on top of the soda mixture using a spoon or piping bag.
