Instructions

  1. Wash the fresh strawberries thoroughly under cold water to remove any dirt or debris.
  2. Hull the strawberries by removing the green tops using a knife or a huller.
  3. Slice the strawberries into smaller pieces to help them break down more easily.
  4. In a medium bowl, combine the sliced strawberries with the granulated sugar to draw out the juices.
  5. Let the mixture sit for about 10-15 minutes until the strawberries release their juices, creating a natural syrup.
  6. Transfer the macerated strawberries to a blender or food processor and blend until smooth. For a chunkier texture, pulse a few times instead of blending completely.
  7. Strain the puree through a fine-mesh sieve into a bowl to remove seeds and larger pieces, pressing with a spatula for maximum yield. Set aside.
  8. In a cold mixing bowl (chill in the freezer for 10 minutes), pour in the heavy cream.
  9. Add the vanilla extract to the heavy cream for flavor.
  10. Using an electric mixer, beat the cream on medium speed until soft peaks form (about 2-3 minutes). Be careful not to overbeat.
  11. If desired, add about 1 tablespoon of powdered sugar for sweetness and continue beating until stiff peaks form.
  12. Set the whipped cream aside in the refrigerator to keep it cool.
  13. Grab a tall glass or mason jar and fill it halfway with ice cubes.
  14. Pour about 1/4 cup of the strawberry puree over the ice, adjusting the amount based on your preference.
  15. Slowly pour in the club soda or sparkling water over the strawberry puree, filling the glass almost to the top.
  16. Gently stir the mixture to combine the strawberry puree with the soda, creating a marbled effect.
  17. Dollop or pipe the whipped cream on top of the soda mixture using a spoon or piping bag.
