  • 2 tablespoons granulated sugar
  • 1 cup heavy cream

  • 1 cup club soda or sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine the sliced strawberries and granulated sugar. Toss gently to coat the strawberries with sugar.
  2. Let the strawberries sit for about 10-15 minutes to draw out their natural juices, creating a syrup.
  3. Transfer the mixture to a small saucepan.
  4. Over medium heat, cook the strawberries for about 5-7 minutes, stirring occasionally until they break down and the mixture thickens slightly.
  5. Remove from heat and let cool for a few minutes.
  6. Strain the syrup into a bowl using a fine mesh strainer, pressing down on the strawberries to extract as much liquid as possible. Discard solids or save for another use.
  7. In a cold mixing bowl, pour in the heavy cream.
  8. Add the vanilla extract to the cream.
  9. Using an electric mixer, beat the cream on medium-high speed until soft peaks form (about 2-3 minutes).
  10. Taste the whipped cream and add sugar if desired, then beat briefly to combine.
  11. Fill a tall glass halfway with ice cubes.
  12. Pour 2-3 tablespoons of the strawberry syrup over the ice.
  13. Slowly pour in the club soda or sparkling water, filling the glass almost to the top.
  14. Gently stir the drink to combine the syrup and soda.
  15. Spoon a generous dollop of whipped cream on top.
  16. Garnish with fresh mint leaves if desired.
