- 2 tablespoons granulated sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup club soda or sparkling water
- Ice cubes

Instructions
- In a medium bowl, combine the sliced strawberries and granulated sugar. Toss gently to coat the strawberries with sugar.
- Let the strawberries sit for about 10-15 minutes to draw out their natural juices, creating a syrup.
- Transfer the mixture to a small saucepan.
- Over medium heat, cook the strawberries for about 5-7 minutes, stirring occasionally until they break down and the mixture thickens slightly.
- Remove from heat and let cool for a few minutes.
- Strain the syrup into a bowl using a fine mesh strainer, pressing down on the strawberries to extract as much liquid as possible. Discard solids or save for another use.
- In a cold mixing bowl, pour in the heavy cream.
- Add the vanilla extract to the cream.
- Using an electric mixer, beat the cream on medium-high speed until soft peaks form (about 2-3 minutes).
- Taste the whipped cream and add sugar if desired, then beat briefly to combine.
- Fill a tall glass halfway with ice cubes.
- Pour 2-3 tablespoons of the strawberry syrup over the ice.
- Slowly pour in the club soda or sparkling water, filling the glass almost to the top.
- Gently stir the drink to combine the syrup and soda.
- Spoon a generous dollop of whipped cream on top.
- Garnish with fresh mint leaves if desired.
