Description
A creamy, cheesy twist on the classic pot pie—this version swaps the crust for crispy golden tater tots! Made with tender chicken, veggies, and a savory filling, it’s the ultimate cozy comfort food.
Ingredients
– 3 cups cooked chicken, diced or shredded
– 2 cups frozen mixed vegetables (peas, corn, carrots, green beans)
– 1 can (10.5 oz) cream of chicken soup
– 1/2 cup sour cream
– 1/2 cup milk
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– Salt and pepper, to taste
– 1 bag frozen tater tots (32 oz)
– 1 1/2 cups shredded cheddar cheese
– 1 tbsp chopped parsley (optional, for garnish)
Instructions
1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
2. In a large bowl, mix the chicken, frozen vegetables, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until well combined.
3. Pour the mixture into the prepared baking dish and spread it out evenly.
4. Sprinkle 1 cup of the shredded cheddar cheese over the top of the filling.
5. Arrange the frozen tater tots in a single layer over the mixture.
6. Bake for 35–40 minutes, or until the filling is bubbling and the tater tots are crispy and golden.
7. Sprinkle the remaining 1/2 cup cheese over the top and return to the oven for 5 minutes, just until melted.
8. Let rest for 5 minutes. Garnish with chopped parsley if desired and serve warm.
Notes
• Use frozen tater tots directly—no need to thaw.
• Rotisserie chicken makes prep even faster.
• Swap in cream of mushroom or celery soup if desired.
• Add a dash of hot sauce or red pepper flakes for a spicy kick.
• Store leftovers in the fridge for up to 4 days or freeze before baking.
