Ingredients
– 2 large boneless, skinless chicken breasts (halved horizontally into 4 cutlets)
– 1 tbsp olive oil
– 1 tbsp butter
– 1 tsp paprika
– ½ tsp garlic powder
– ½ tsp onion powder
– Salt and pepper to taste
– 1 cup shredded Monterey Jack cheese
– 1 small onion, thinly sliced
– ½ cup sliced mushrooms (optional)
– ½ cup chicken broth
– 1 tbsp Worcestershire sauce
– Fresh parsley, for garnish
Instructions
1. Slice chicken breasts in half horizontally to make 4 cutlets. Season both sides with paprika, garlic powder, onion powder, salt, and pepper.
2. Heat olive oil and butter in a skillet over medium-high heat. Cook chicken 4–5 minutes per side, or until golden brown and cooked through. Transfer to a plate and set aside.
3. In the same skillet, sauté sliced onions (and mushrooms, if using) for 4–6 minutes until softened and golden.
4. Add chicken broth and Worcestershire sauce to the skillet. Scrape the bottom of the pan and let simmer for 2–3 minutes to reduce slightly.
5. Return the chicken to the pan and spoon the sauce over each piece.
6. Sprinkle shredded Jack cheese over each cutlet. Cover with a lid and let the cheese melt off heat for 2–3 minutes.
7. Garnish with fresh parsley and serve immediately.
