These Blueberry Oatmeal Bars feature a buttery oat crust, a jammy blueberry filling, and a golden crumble topping. Perfect for breakfast, snacks, or dessert — wholesome, easy, and delicious.
Ingredients
Oat Crust & Crumble:
1 ½ cups old-fashioned oats
1 ¼ cups all-purpose flour
½ cup brown sugar
½ tsp baking powder
½ tsp cinnamon
¼ tsp salt
¾ cup melted butter or coconut oil
Blueberry Filling:
2 cups blueberries
2 tbsp granulated sugar
1 tbsp cornstarch
1 tsp lemon juice
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line 8×8-inch pan with parchment.
2. Mix oats, flour, sugar, baking powder, cinnamon, and salt. Add melted butter and stir until crumbly.
3. Press two-thirds into pan for crust.
4. Toss blueberries with sugar, cornstarch, lemon juice, and vanilla. Spread over crust.
5. Sprinkle remaining oat mixture on top.
6. Bake 30–35 minutes until golden and bubbly. Cool before slicing.
Notes
Cool completely before cutting for neat slices.
Use frozen blueberries with a bit more cornstarch.
Add nuts or seeds for crunch.
