Description
Smoky sausage, colorful veggies, and herbs roasted to golden perfection on one pan. A 30-minute dinner that’s healthy, hearty, and bursting with flavor.
Ingredients
1 lb sausage, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 red onion, sliced
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp smoked paprika
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions
1. Preheat oven to 425°F and line a sheet pan.
2. Toss sausage and vegetables with oil and seasonings.
3. Spread evenly on pan and roast 20–25 minutes, stirring once.
4. Garnish with parsley and serve warm.
Notes
For extra flavor, drizzle with balsamic glaze before serving.
Add red pepper flakes for spice or Parmesan for richness.
